Store Cupboard Quick Fixes – Frozen Peas


Turn this freezer staple into a key ingredient for soups, salads and fabulous frittatas. You’ll be amazed by what you can do with frozen peas!

Make a cheat’s soup by briefly cooking peas for a few minutes in vegetable stock with a little mint sauce, salt and pepper. Purée in a processor until smooth, sieve into a pan, add cream, heat and serve sprinkled with croûtons, crispy bacon or finely shredded ham.

Combine sliced warm new potatoes with cooked peas, blanched sugar snaps and a dressing made from mint sauce and olive oil for a simple spring salad.

Add defrosted peas to an eggy tinned crab or salmon frittata. Peas, grated courgettes and cooked potatoes are also a lovely combination.

Purée cooked peas in a processor, pass through a sieve, loosen with sour cream or yoghurt, season and use as a dip or serve warm with grilled fish or chicken.
